SAFFRONLY MOUSSE

Saffronly Mousse

Servings 8

Ingredients:

  • 1/4 tbsp of Saffronly saffron
  • 300ml Double Cream
  • 140g White Chocolate, chopped in small pieces

Instructions:

  1. In a large bowl, heat the white chocolate with 1/3 cup of the double cream and Saffronly in the microwave in 20-30 seconds intervals on high power. Ensure you stir in between.
  2. Once the chocolate cream mixture is smooth, allow the mixture cool until it reaches room temperature. (Usually takes about 30mins)
  3. In a separate bowl, using an electric whisk, whisk the remaining double cream until it reaches soft peak form
  4. Add 2 tbsps of whipped cream to the white chocolate mixture and whisk by hand until smooth.
  5. Add half of the remaining whipped cream and fold gently until combined. Add the remaining whipped cream and fold until combined and smooth.
  6. Mix the whisked double cream with the mixture
  7. Divide the mousse into 8 individual cups and chill for at least 2 hours until set
  8. Garnish the top, with rose petals and pistachios
