SAFFRONLY MOUSSE

Ingredients:
- 1/4 tbsp of Saffronly saffron
- 300ml Double Cream
- 140g White Chocolate, chopped in small pieces
Instructions:
- In a large bowl, heat the white chocolate with 1/3 cup of the double cream and Saffronly in the microwave in 20-30 seconds intervals on high power. Ensure you stir in between.
- Once the chocolate cream mixture is smooth, allow the mixture cool until it reaches room temperature. (Usually takes about 30mins)
- In a separate bowl, using an electric whisk, whisk the remaining double cream until it reaches soft peak form
- Add 2 tbsps of whipped cream to the white chocolate mixture and whisk by hand until smooth.
- Add half of the remaining whipped cream and fold gently until combined. Add the remaining whipped cream and fold until combined and smooth.
- Mix the whisked double cream with the mixture
- Divide the mousse into 8 individual cups and chill for at least 2 hours until set
- Garnish the top, with rose petals and pistachios
