SAFFRONLY LEMON TAGLIATELLE

Ingredients: 

  • 2 tablespoons butter 
  • 2 cloves garlic minced 
  • 0.5 Pinch Saffronly saffron threads 
  • 200 ml double cream 
  • 0.25 teaspoons lemon juice 
  • 0.5 teaspoon lemon zest unwaxed lemon
  • 228g dried tagliatelle pasta 
  • 3 tablespoons grated vegetarian hard cheese plus more for topping (can be swapped for Parmesan) 
  • fresh parsley chopped
  • salt and freshly ground pepper to taste

Instructions:

  1. Bring a large pot of salted water till it is boiling.
  2. Meanwhile, melt the butter in a large pan over medium heat.
  3. Add the garlic and Saffronly saffron and cook, stirring occasionally, for about 2 minutes.
  4. Add the cream and increase the heat to medium-high.
  5. Simmer until slightly thickened, about 2-3 minutes. Stir in the lemon juice.
  6. Add the pasta to the boiling water and cook according to the instructions.
  7. Remove 60ml (1/4 cup) of water from the pasta, then drain the pasta and transfer to the skillet with the sauce.
  8. Add the reserved pasta water and stir in the vegetarian hard cheese and lemon zest.
  9. Salt & pepper to taste.
  10. Serve topped with more cheese & parsley
