SAFFRONLY LEMON TAGLIATELLE

Ingredients:
- 2 tablespoons butter
- 2 cloves garlic minced
- 0.5 Pinch Saffronly saffron threads
- 200 ml double cream
- 0.25 teaspoons lemon juice
- 0.5 teaspoon lemon zest unwaxed lemon
- 228g dried tagliatelle pasta
- 3 tablespoons grated vegetarian hard cheese plus more for topping (can be swapped for Parmesan)
- fresh parsley chopped
- salt and freshly ground pepper to taste
Instructions:
- Bring a large pot of salted water till it is boiling.
- Meanwhile, melt the butter in a large pan over medium heat.
- Add the garlic and Saffronly saffron and cook, stirring occasionally, for about 2 minutes.
- Add the cream and increase the heat to medium-high.
- Simmer until slightly thickened, about 2-3 minutes. Stir in the lemon juice.
- Add the pasta to the boiling water and cook according to the instructions.
- Remove 60ml (1/4 cup) of water from the pasta, then drain the pasta and transfer to the skillet with the sauce.
- Add the reserved pasta water and stir in the vegetarian hard cheese and lemon zest.
- Salt & pepper to taste.
- Serve topped with more cheese & parsley
